Banana bread

Ingredients


3-4 bananas

90 gr unsalted butter, melted.

1/2 cup granulated sugar plus extra for sprinkling

1/2 cup packed light brown sugar

1 large egg, at room temperature

1 tsp vainilla extract

1 1/2 all purpose flour

1 tsp baking soda

1/4 tsp salt

1 cup chocolate chips or walnut pieces (optional)

1/2 raisins (optional)


Directions


  1. Preheat the oven to 325 F (160C) and grease a loaf pan

  2. Whisk the banana, melted butter, granulated and brown sugar together until well-blended. Whisk in the egg and the vainilla.

  3. In a separate bowl, sift the flour, baking soda and salt. Add this to the banana mixture and stir just until blended. Stir in the chocolate chips or walnut pieces (if using). Scrape the batter into the prepared loaf tin and sprinkle the top with a little sugar. Bake for about 55 - 65 min, until a tester inserted in the center of the cake comes out clean. Cool the cake for 20 min in the tin, then turn it out to cool completely.


The banana bread will keep well-wrapped for up to 3 days.
